Fresh vegetables

This might seem a bit extreme, but I'll post it anyway, and hope that it's useful to someone out there.

Every afternoon, I fill the largest bowl in my kitchen with fresh, cut vegetables. The more shapes, textures, flavors, and colors, the better! I try to vary what goes in, so that we never tire of it. The bowl is ready in time for after-school munching, and there's still plenty left for the whole family at dinner time. To be completely honest, I must admit that my kids sometimes don't feel like eating it, and I never insist; but often they enjoy it, and by the end of the day, the bowl is empty. As for me and my husband, we usually enjoy the veggies so much that we hardly have room for anything else.

After I started this routine, my hemorrhoids, which plagued me for years, disappeared completely. I also believe, although I can't prove it, that my prolapse would be worse without it.

Here are some of the veggies that I use: red, green, and Romaine lettuces; red, orange, yellow and green peppers; cucumbers, carrots, sugar snap peas, snow peas, arugula, radicchio, spinach, Belgian endive, tomatoes, chicory, escarole...

I agree. I feel a little embarrassed to serve it when an unexpected guest shows up and stays for dinner; when that happens, we call it "punishment salad!" :)
