pan cakes

not sure of all the amounts but- we just had these tonight for dinner and they were yummy
all organic of course

cut up fresh peach(or any fruit fresh or frozen)about 1 C
1 and a half C whole wheat flour
half C of applesauce
1 and a quarter C soy milk (rice milk oat milk almond milk or whatever milk you use)
1 and a half tsp baking powder
1 tbs fresh ground flax seed
dash of salt
dash of vinalla
2 eggs
some earth balance spread (melt it maybe 1 quarter C or use olive oil)

combo all but fruit
stir in fruit last
cook on griddle or on stove top

Up until recently I've never eaten spinich. I thought I'd share my secret recipe with you.

1 hand-full of spinich
a little bit of water
1 teaspoon of flaxmeal
several squirts of butter spray
several shakes of rice or soy fake parmesan cheese

Put your spinich in a bowl and sprinkle with a little bit of water. Put in the microwave for about 1 minute. Leaves should be wilted. Add remaining items and mix.

You girls really do my heart good! I'm so proud of you for eating organic. I know I'm passionate about all things organic and hope I don't talk too much about it. I do have a tendency to do that. I now have a few questions. I make an energy bar(all organic) with
2 cups oats 1/4 cup chopped walnuts 1/2 cup raisins
1/2 cup shredded coconut 2 large ripe mashed bananas
1/4 cup applesauce
Mix ingredients in a bowl, press into 9x9 pan and bake for 30 minutes at 350 degrees. Cool, cut into bars, store in fridge or eat.

I substitue for the raisins and walnuts these cominations: dried cherries and pecans, OR dried apricots and almonds, OR dried cranberries and pecans, but use everything else in the recipe.

Now, does baking it destroy the nutrients? And can it just be pressed in a pan and put in the fridge until it sets up? Also, I want to make a bar with apples, cinnamon and honey and without the bananas. I can't find a recipe with these ingredients online anywhere that doesn't have wheat and dairy in it. Do you think the above recipe would work so far as moisture content without the bananas? I haven't done a trial and error method since organic dried fruit is so high and I didn't want to mess up a batch. We love the bars and they do last up to three weeks in the fridge. Any input would be helpful.

Also, with my leftovers, I made up our own batch of trailmix with all the ingredients for the different bars and it is so good!
